Mexican Lasagna

Ingredients

  • 1 tbsp olive oil
  • 2 large garlic cloves
  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 small yellow onion
  • 2 10oz cans rotel
  • 15 oz can southwest corn
  • 12 8in. flour tortillas
  • 15 oz can black beans
  • 16 oz can refried beans
  • 3 cups shredded cheese

Steps

  1. Cook Filling
  2. Heat olive oil to a large skillet and cook ground beef until almost all browned.
  3. Add onion and cook until the beef is completely browned.
  4. Add garlic and cook for 30-60 seconds, or until fragrant.
  5. Stir in taco seasoning until well combined.
  6. Add Rotel tomatoes, corn, and black beans and stir until well combined.
  7. Bring the mixture to a simmer and cook for 10-15 minutes or until all the flavors are combined.
  8. Assembly
  9. Layer tortillas on the bottom of the baking dish, overlapping slightly and cutting to fit if necessary.
  10. Spread a layer of refried beans on top of the tortillas.
  11. Add ¼ of the cheese over the beans.
  12. Next, top with ⅓ of the meat mixture.
  13. Repeat the layers, ending with a layer of tortillas.
  14. Top with the remaining cheese.
  15. Cooking
  16. Move the oven rack to the middle position and preheat the oven to 375 degrees F.
  17. Spray a 13×9 inch baking dish with nonstick cooking spray.
  18. Bake for 15-20 minutes or until the cheese is melted and bubbly.
