Angel Hair Past with Plum Tomatoes and Fresh Basil

Ingredients

  • 6 oz Angel Hair Pasta
  • 1 tbsp Extra Virgin Olive Oil
  • 1 Garlic Clove, crushed
  • 6 Plum Tomatoes, peeled, seeded and chopped
  • ½ cup Minced Fresh Basil
  • ½ tsp Salt
  • Freshly Ground Pepper, to taste
  • 2 tsp Balsamic Vinegar
  • 1 ½ oz Parmesan Cheese, shaved

Steps

  1. Cook the pasta according to package directions. Drain, set aside and keep warm.
  2. In a large nonstick skillet, heat the oil. Add the garlic and saute until fragrant, about 30 seconds.
  3. Add the tomatoes and cook, stirring as needed, until softened, about 5 minutes.
  4. Stir in the basil, salt, and pepper; cook until the tomatoes are very soft, about 5 minutes.
  5. Pour over the pasta; toss with the balsamic vinegar. Serve, topped with the Parmesan
