Cook Filling

  1. Heat olive oil to a large skillet and cook ground beef until almost all browned.
  2. Add onion and cook until the beef is completely browned.
  3. Add garlic and cook for 30-60 seconds, or until fragrant.
  4. Stir in taco seasoning until well combined.
  5. Add Rotel tomatoes, corn, and black beans and stir until well combined.
  6. Bring the mixture to a simmer and cook for 10-15 minutes or until all the flavors are combined.

Assembly

  1. Layer tortillas on the bottom of the baking dish, overlapping slightly and cutting to fit if necessary.
  2. Spread a layer of refried beans on top of the tortillas.
  3. Add ¼ of the cheese over the beans.
  4. Next, top with ⅓ of the meat mixture.
  5. Repeat the layers, ending with a layer of tortillas.
  6. Top with the remaining cheese.

Cooking

  1. Move the oven rack to the middle position and preheat the oven to 375 degrees F.
  2. Spray a 13×9 inch baking dish with nonstick cooking spray.
  3. Bake for 15-20 minutes or until the cheese is melted and bubbly.
